2 tablespoons salt Preheat oven to 350 degrees. Mix the salt, cumin, brown sugar, chili powder, pepper, cayenne, and paprika together and rub as much of it as you can over the skin of the chicken. Stuff the chopped onion and the remaining dry spices into the can of beer and then stick the can into the chicken’s cavity so that the chicken is "sitting" on the can—a.k.a., the throne. Place the chicken upright in a roasting pan and roast until golden brown and fall-off-the-bone tender, 2-2 1/2 hours. Enjoy! |
